Monday Munchies: Pineapple Ice Cream Sandwich

Don’t wait for your local ice cream truck to roll through your neighbourhood to snag an ice cream sandwich.

Make this one from the comfort of your own home instead!  


2 (1/4-inch thick) fresh pineapple slices

1 cup ice cream of your choice

2 Tbsp toasted flaked coconut


  1. Grill pineapple slices for about 90 seconds on each side (or, until grill marks appear if using a skillet on high heat). Let slices cool completely.
  2. Sandwich ice cream between the pineapple slices.
  3. Coat edges in toasted coconut.
  4. Slice and serve.
